Kale Caesar Salad with Veggie Burger Croutons

This vegan Caesar salad dressing is the perfect combination of salty, creamy and tangy. It’s good enough to eat with a spoon — but it’s even tastier mixed with kale and crumbled Amy’s Veggie Burgers.


1 head of dinosaur kale, stems removed and torn into pieces
2 Amy’s Sonoma Veggie Burgers , thawed slightly, crumbled into bite-size pieces and cooked until crispy golden brown.  (contains tree nuts, walnuts)
Nutritional yeast for garnish (optional)

Vegan Caesar Dressing
¼ cup hummus
¼ cup vegan mayonnaise
2 cloves garlic, minced
2 tablespoons lemon juice
2 teaspoons chopped capers
Plenty of freshly cracked black pepper
Salt to taste


For the dressing – Combine all ingredients, except chopped capers, in a small food processor and mix until smooth, scraping down the sides frequently to incorporate all ingredients. Fold in capers and refrigerate dressing until ready to use.

For the salad – Prepare the Veggie Burgers as specified above. In a large bowl, add kale, drizzle with dressing and toss to coat evenly. Season with a few turns of freshly cracked black pepper and a pinch of salt. Top with Veggie Burger “croutons” and sprinkle with nutritional yeast for garnish.
